Because we believe in natural methods of grape processing, we also believe in our wine. We believe that top quality is only possible with total commitment. We strive to make our wines natural and people-friendly. Because first and foremost, we make wine for ourselves, our family and our friends.
Wipach wines are produced using the French method of battônage (stirring the lees in the wine during ageing). In this way, the wine's creamy texture and smooth, intense flavour are brought out by natural processes. The lactic-acid deacidification produces a soft and pleasantly buttery texture. As a result, we do not use artificial flavours and colours, so our wines are natural and unadulterated.
Almost all of our wines are aged in French barrique casks, which bring out the fruity aromas and enrich the colour of the wine. As a result, the wine is more resistant and persistent, thanks to the presence of oak tannin and charring. This is also the reason for the lower sulphur content. As a small boutique winery, we only bottle our wines.
We chose the name for the winery in connection with our home town - Vipava. The first inhabitants of Vipava were Celts. Hence its name; the word Vipava is derived from two Celtic words: 'WIP' (meaning valley, landscape) and 'ACH' (rock, stone), so that, loosely translated from the Celtic, WIPACH would mean the valley under the rocks.
The main reason why we chose the Celtic name WIPACH is the fact that the Celts were crazy about wine. And our wish is that you, too, will be crazy about our wine. WIPACH wine
